Butterscotch Cake

We all like to have some sweet after every meal. If you are someone with a same wavelength of mine, you will eat it continously. The first option for most of us will be cakes! Whether its a birthday , eid , retirement party, wedding , baby shower, cake cutting is a must for all of these celebrations. Many of us bake cakes so well, but some others don't know it. This blog will be for those who don't know to bake a cake. Here i am sharing the recipe of Butterscotch Cake. I know that this is not a perfect one, so i like to call it my style of butterscotch cake.But trust me ,it will melt in your mouth.
Butterscotch Cake

We are describing the process in four steps: Baking cake,making caramelized nuts , making butter scotch sauce and finally preparing the butterscotch cake.

Ingredients :

Note : 1 cup = 250 ml

For cake

  1. All purpose flour or Maida - 1cup
  2. Baking powder - 1/2 table spoon
  3. Baking Soda - 1/4 tsp
  4. Salt - 1 pinch
  5. Egg - 3
  6. Vanilla Essence -1 tsp
  7. Butterscotch essence - 1 tsp
  8. Sunflower Oil -1/2 cup
  9. Milk - 1/4 cup
  10. Sugar -3/4 cup
For Caramelized nuts
  1. Sugar - 1 cup
  2. Butter - 3 table spoon
  3. Nuts - 1 cup
For Butterscotch Sauce
  1. Sugar - 1/2 cup
  2. Butter - 1/4 cup
  3. Whipping Cream - 1/2 cup
Preparation :

Cake
  1. Take the eggs in a bowl, add sugar , vanilla essence and Butterscotch essence to it and beat well with a beater or whisk.
  2. Add sunflower oil and milk  and beat again.
  3. Sieve the dry ingredients and combine them in a bowl.
  4. Now add half of the sieved dry ingredients to the egg mixture and mix well using a spatula.
  5. Add the remaining dry ingredients and mix it until it becomes smooth. Do not over mix the batter.
  6. Here we are baking the cake without using an oven. Grease a deep pan with butter and you can use a butter paper to cover the sides and bottom of the pan if you want. 
  7. Transfer the cake mix into the deep pan and tap it well so that there will be no air bubbles. 
  8. Bake the cake for almost 40 minutes in a medium flame. To check whether the cake is ready or not, use a toothpick . If the toothpick comes out easily without sticking to it, the cake is ready.
  9. Allow the cake to cool. By that time you can prepare the remaining.
 Caramelized nuts
  1. Take the sugar in a pan and caramelize it in a low flame until it becomes golden in color.
  2. Add the butter to this caramelized sugar and allow it to melt.
  3. Now add the nuts to this caramelized sugar butter mix. You can use cashews, Badam,pista ,almond as nuts.
  4. Transfer this mix in to butter paper and leave it for 30 minutes.
  5. The mix will become hard within 30 minutes.
  6. Crush the hardened mix in to a medium sized powder. Don't crush it into fine powder.Keep it aside.
Butterscotch Sauce
  1. Take the sugar in a pan, caramelize it in a low flame until it becomes golden in color.
  2. Add Butter to this caramelized sugar and allow it to melt in the sugar.
  3. Add the 1/2 cup whipping cream to this mix and combine it well.The mix should be smooth in texture. Keep it refrigerated.(Note : The whipping cream used here is not beated, we use the pure form of whipping cream to make the sauce)
  4. Take some whipping cream in a bowl and beat it using a beater or whisk until it becomes consistent.Add some butter scotch essence to it.
Preparing Butterscotch Cake
  1. The cake should be flat on both the top and bottom. Use a large knife to remove the dome from the top portion, if needed.
  2. Cut the cake in to three layers.For perfection , use the bottom portion of the cake on the top side and vice versa.
  3. Pour sugar syrup on each piece of cake so that it becomes more smooth and will melt in our mouth.Spread the caramel sauce , whipping cream and some nuts between each layers of cake.
  4. So we have prepared the layers. Now place the cake in a cardboard cake round.
  5. Spread the whipping cream on top and sides of the cake and keep it in the refrigerator for 20 minutes.
  6. After that, pour the caramel sauce on top of the cake.
  7. Place the caramelized nuts on sides of the cake to make it more beautiful.
  8. You can use the remaining whipping cream to decorate the cake according to your creativity.
  9. Keep it refrigerated for 30 minutes and then cut and serve to your loved ones.
