Ghee rice is a very famous South Indian dish which goes well with beef curry, chicken curry or any gravies. The aromatic and delicious pot rice is a must in every malabari homes for all festivals. The marriage nights of most muslim homes have ghee rice with an excellent combination of beef curry and salad.
Ingredients :
1) Ghee - 1 cup
2)Onion - 1 medium sized
3) Carrot -2
4) Barkath rice -1/2 kg
5) Coconut oil - 4 table spoon
6) Cardamon - 4-5 nos
7) Fenel seeds / Perumjeerakam -1 tspn
8)Cinnamon -1 small piece
9) Water as required
10) Salt -1 spoon
11)Cloves -4 nos
12)Tej patta - 1 leaf
13) Cashews - 10-15
14) Raisins - 1 table spoon
Preperations :
# Rinse the rice in water till the water runs clear of starch. Then soak the rice in water for the next 30 minutes.
# After 30 minutes, drain the water and keep the rice aside.
# Slice one onions and one carrot and keep it aside.
# Heat and a little coconut oil and 3 table spoon of ghee in a large bottomed pot.
# Fry the cashews and resins and keep them aside.
# To the same ghee, add the spices ( cardamon, cloves, Tej patta, Cinnamon, Fennel seeds) and let them crackle. Do not burn the spices.
# Then add the onions immediately. Add oil if you feel it less.
# Fry the onion till it become golden colour.
# Now we can add the soaked rice and mix it well with the ghenn.
# Then add water as required. (Mostly 1.5- 2 cups)
# Add the carrots to this and season it with 1 small spoon(1/3 tspn) of salt.
# Cover the pot tightly with a lid and cook it till the rice is cooked and all the water is absorbed. Check whether the rice is cooked in between.
# Once the flame is off, wait for 5 minutes and open the pot, the ghee rice is ready.
# Garnish it with cashews and resins and ready to serve.
# Enjoy it with your favourite curries.
