We are describing the process in four steps: Baking cake,making caramelized nuts , making butter scotch sauce and finally preparing the butterscotch cake.
Ingredients :
Note : 1 cup = 250 ml
For cake
- All purpose flour or Maida - 1cup
- Baking powder - 1/2 table spoon
- Baking Soda - 1/4 tsp
- Salt - 1 pinch
- Egg - 3
- Vanilla Essence -1 tsp
- Butterscotch essence - 1 tsp
- Sunflower Oil -1/2 cup
- Milk - 1/4 cup
- Sugar -3/4 cup
For Caramelized nuts
- Sugar - 1 cup
- Butter - 3 table spoon
- Nuts - 1 cup
For Butterscotch Sauce
- Sugar - 1/2 cup
- Butter - 1/4 cup
- Whipping Cream - 1/2 cup
Preparation :
Cake
- Take the eggs in a bowl, add sugar , vanilla essence and Butterscotch essence to it and beat well with a beater or whisk.
- Add sunflower oil and milk and beat again.
- Sieve the dry ingredients and combine them in a bowl.
- Now add half of the sieved dry ingredients to the egg mixture and mix well using a spatula.
- Add the remaining dry ingredients and mix it until it becomes smooth. Do not over mix the batter.
- Here we are baking the cake without using an oven. Grease a deep pan with butter and you can use a butter paper to cover the sides and bottom of the pan if you want.
- Transfer the cake mix into the deep pan and tap it well so that there will be no air bubbles.
- Bake the cake for almost 40 minutes in a medium flame. To check whether the cake is ready or not, use a toothpick . If the toothpick comes out easily without sticking to it, the cake is ready.
- Allow the cake to cool. By that time you can prepare the remaining.
Caramelized nuts
- Take the sugar in a pan and caramelize it in a low flame until it becomes golden in color.
- Add the butter to this caramelized sugar and allow it to melt.
- Now add the nuts to this caramelized sugar butter mix. You can use cashews, Badam,pista ,almond as nuts.
- Transfer this mix in to butter paper and leave it for 30 minutes.
- The mix will become hard within 30 minutes.
- Crush the hardened mix in to a medium sized powder. Don't crush it into fine powder.Keep it aside.
Butterscotch Sauce
- Take the sugar in a pan, caramelize it in a low flame until it becomes golden in color.
- Add Butter to this caramelized sugar and allow it to melt in the sugar.
- Add the 1/2 cup whipping cream to this mix and combine it well.The mix should be smooth in texture. Keep it refrigerated.(Note : The whipping cream used here is not beated, we use the pure form of whipping cream to make the sauce)
- Take some whipping cream in a bowl and beat it using a beater or whisk until it becomes consistent.Add some butter scotch essence to it.
Preparing Butterscotch Cake
- The cake should be flat on both the top and bottom. Use a large knife to remove the dome from the top portion, if needed.
- Cut the cake in to three layers.For perfection , use the bottom portion of the cake on the top side and vice versa.
- Pour sugar syrup on each piece of cake so that it becomes more smooth and will melt in our mouth.Spread the caramel sauce , whipping cream and some nuts between each layers of cake.
- So we have prepared the layers. Now place the cake in a cardboard cake round.
- Spread the whipping cream on top and sides of the cake and keep it in the refrigerator for 20 minutes.
- After that, pour the caramel sauce on top of the cake.
- Place the caramelized nuts on sides of the cake to make it more beautiful.
- You can use the remaining whipping cream to decorate the cake according to your creativity.
- Keep it refrigerated for 30 minutes and then cut and serve to your loved ones.
